CoCoFir Curry

I love the combination of curry and muun chi CoCoFir. CoCoFir has a wonderful texture that combines perfectly with a curry blend, and it‘s such a nice way to warm your heart and tummy. I like to start off my curries with


1 T coconut oil

1 chopped and diced red onion

2 T chopped or grated fresh ginger

3 cloves of garlic, chopped.

1 T each of garam masala, turmeric

black pepper, salt, cayenne pepper to your liking


I then add and let simmer


1/2 c each of diced tomatoes, apples and sliced mushrooms

1 1/2 c muun chi CoCoFir

1 1/2 c cooked chickpeas (or one 16 oz. can)


Add the juice of one lime and chopped cilantro. Serve over a bed of quinoa and chopped greens.

  • 2 tbsp freshly-squeezed lime juice (1 lime) (lemon also works)

  • chopped fresh cilantro (coriander) for serving
