Cailiflower Mash in an Acorn Squash Nest

I love combining simple ingredients and staying as true to their flavors as possible. Here’s a dish that looks fancy but is super easy to make. I made this for a friend and her family and was able to custom design it to suit the dietary needs of her mom who has trouble digesting nuts and seeds.


1 medium head of cauliflower, chopped include stem

1 head of garlic, include skin

2 T olive oil

1/4 cup CoCoFir

1/4 c crumbs from Protein Crackers

Salt and pepper, to taste

Fresh parsley


2 nice size acorn squash

1 T avocado oil


Cut the acorn squash close to the stem so it’s a vertical cut as opposed to a horizontal one. Scoop out the seeds and roast on the side next to the squash. Sprinkle avocado oil and a little salt, rubbing into the meat of the squash.


Place face down on pan along with the garlic head cut in half, skins on with avocado oil sprinkled on top - 400 degrees until tender - 25 min should be fine.


Combine the cauliflower, olive oil, CoCoFir, roasted seeds and roasted head of garlic into a food processor. Roughly chop or blend smooth depending on your taste preference .


Scoop the mash into the acorn halves, sprinkle tops with cracker crumbs for those who are able to eat seeds and return to a 350 degree oven - warm for 20 min.


Enjoy with friends and family!!! Slather with lots of love and dollops of CoCoFir or Lemon Chia pudding
