Bowl of Blessings

If I could end the year with all my favorite ingredients in a bowl, this may just be it. There are thousands of plants I could put in this bowl, but the combination of these is particularly divine!


Veggies:


1 T avocado oil

1 red beet cubed

2 c chopped kale

1 c shiitake and oyster mushrooms

1 c purple cabbage shredded

1 T chopped fresh thyme and sage combo


Take each of the ingredients and gently saute each til tender. The beets do better roasted in the oven at 400 degrees or steamed. Combine with the other ingredients.


Grains:


2 c cooked flax brown rice & quinoa combo (cooked the night before, cooled in fridge overnight and then warmed the next day)


Dressing:


2 T muun chi lemon chia pudding

1 T muun chi Spicy Fermented Roots

1 T coconut aminos

1 T muun chi almond butter dressing

2 T olive oil


Combine the ingredients in a blender or whisk in a bowl.

Topping:

1 avocado, sliced

1 sliced jalapeño with the seeds

1/4 c toasted pumpkin, sunflower & hemp seeds


Toss all the ingredients together and serve with tons of love and gratitude. Close your eyes and experience the divine as you taste the flavors of these veggies and grains combine to give you the benefits of gut healing short chain fatty acids and a ton of nutrients!
