Baked Apple Pie without the Inflammatory stuff

I love to keep things simple. And I love foods that heal instead of harm. This is a recipe you can make in advance, and it’s so easy! All the sweetness is coming from nature herself.


A handful of goji berries that you soak in warm water for 15 minutes. Drain.

1/2 c chopped walnuts

1 medjool date

1 1/4 tsp cinnamon

1 T fresh lemon juice


1/4 c muun chi UPsli.


4 large baking apples, cores removed, skin on (Granny Smiths work well).


Pulse the goji berries and the date with the cinnamon and lemon until smooth. It will have a loose paste consistency. Add the chopped walnuts and set aside.


Prepare your apples by chopping of the top third and saving that top. Rub the exposed apples, top and bottom with the lemon peel from the juicing. Fill each apple with the goji berry filling. Place the apples in a shallow baking dish with 1/2 cup water. Cover and bake at 350 degrees until tender. About 1 hour. Serve warm is best, with a dollop of CoCoFir on top! With a sprinkle of cinnamon and UPsli. Smile knowing your beneficial bacteria are flourishing and multiplying and thanking you for such a delightful way to end the day.
