Avocado Boats

These little treasures are so easy to make and so delicious! The kids love to help make them and then devour them! You can add sails to them or just eat them as they are!
2 med size avocados
1 15-ounce can black beans or 1 ½ c cooked black beans
1/2 t each cumin and chili powder
Lime juice from one lime
Fresh cilantro, chopped
1/2 medium red onion, chopped
1 T muun chi Fermented Roots
¼ c muun chi CoCoFor
Cut the avocados in half. Remove the pit and scoop some of the avocado into a separate bowl, keeping most of the avocado meat in the boat.
Add the spices, cilantro and roots to the black beans. Simmer the beans until fragrant.
Mix about a 1 T of the avocado meat with the chopped onion and a squeeze of lime juice and a touch of mineral salt.
Place the beans into the avocado boats. Place a T of smashed avocado with chopped onions onto each of the boats. Plop a spoon of cocofir on each of the avocado dollops and serve alongside a side of muunkraut or your favorite fermented side. This dish is packed with protein and fiber. Add your favorite salsa or some chopped tomatoes. Yummmmm!
