A Twist on the Mendo Curry Couscous


Every once in awhile you come across a dish that you must replicate because it is so yummy. The curry couscous salad at Mendocino Farms is one such dish. To make this dish without any sugar, I love to use muun chi CoCoFir, which is naturally a little sweet without any refined sugar.


1 head of cauliflower, finely diced

1 T coriander

1 T turmeric

1 T cumin

1 T curry powder

1 T olive oil

1 tsp cayenne pepper


Toss all the above until lightly coated, roast in a 450 degree oven for 10 minutes. Make sure your cauliflower is still crunch. Remove from pan and place in a serving bowl. Using the same bowl, add


1 finely chopped carrot


Toss in spices and oil left on the pan, and roast for 8 minutes.


Gently toss the carrots and the cauliflower together. Add


1 c muun chi CoCoFir

1 c chopped cilantro

2 T fresh lime juice

1 1/2 tsp salt
