Simple Summer Salad

There is something divine about a perfectly ripe watermelon to celebrate the spectacular summer evenings…! I sat down with my best friend before heading to the park for some live music and served a watermelon salad while we discussed the week. I hope you enjoy it as much as we did. What a nice way to enjoy this journey of miraculous healing together. I felt myself become a kid again just letting the watermelon hydrate my skin and the probiotic cheese feed my microbes.


2 cups chopped watermelon

3/4 c crumbled plain CoCoFir Fauxmage

1/3 c chopped fresh mint

3 T Golden Turmeric Kvass

Dash of fresh cracked black pepper


Put chopped watermelon into a shallow bowl. Gently fold in the Kvass with the black pepper. Sprinkle on the crumbled fauxmage and top with the fresh mint. Smell the fresh aroma of summer, close your eyes and find yourself singing along with your gut microbes. It’s fun to feel young now and forever!
