muun chi Minestrone Longevity Stew

I love listening to folks share their favorite soups. This is a stew that wr created combining the ingredients of several people’s wonderful shares. It’s a celebration of end of summer - think tomatoes -and beginning of autumn - think squash.


Combine all the following into a big pot.


1 cup diced celery

1/2 cup diced carrots

1/2 yellow onion, diced

1 c green beans, sliced into 1 inch pieces

1 c butternut squash chopped into cubes

2 c cooked black eye peas

1 c cooked black or kidney beans

4 cups vegetable broth

4 c crushed tomatoes

1 cup cooked quinoa or farro (this has gluten)

1 sprig rosemary

1 bay leaf

1 tosp chopped oregano

2 tbsp chopped fresh chopped parsley

1 cup chopped kale or Swiss chard or zucchini

1 tsp pepper and pink Himalayan salt


This is a full on meal packed with protein and fiber. Enjoy chopping with your family and smelling the amazing aroma! And then close your eyes and taste the magic.
