Mediterranean Stuffed Zucchini Boats

Zucchini are in massive abundance at the farmers market and our gardens.  My trainer pulled out a big one from her garden and offered it to me! I couldn’t resist! There are so many great recipes using this very versatile vegetable. This recipe is simple and packed with gut loving goodness!


2 large zucchini cut in half lengthwise

½ lb cherry tomatoes

1 lb mushrooms

1 lb spinach, chopped

Fresh basil – about ten fresh leaves torn

1 T muun chi Fermented Roots

1 T muun chi Seed and Nut Crunch or your favorite nuts or sprinkle

Olive oil


Scoop out the zucchini meat leaving the outer skin in the shape of boats.


Chop tomatoes, spinach, zucchini meat and mushrooms, saute them with fermented roots and a little olive oil.


Stuff the zucchini boats with the sautéed veggies.

Bake at 400°F for about 25 minutes, finishing with muun chi Seed and Nut Crunch


The kids love these if you let them stick a toothpick with a flag in the boat. Have them stuff the boats and they get an even bigger kick out of eating them! Enjoy the goodness of plants!
