I love kale. It is one of those dark green leafy veggies that is packed with fiber and nutrients that will help keep your hormones and gut happy. This month muun chi is writing about all things good for the endocrine system.
Try this fun recipe that highlights both the kale and the zucchini. Good for the heart, hormones, gut and so much more!
1 bunch 1/2 lb kale
2 zucchini spiralized
2 T muun chi vegan butter
4 cloves garlic, crushed
In a separate bowl prepare your vegan Parmesan cheese
1/4 cup cashews ground fine
1 T nutritional yeast
Pinch salt and pepper
Pinch red pepper flakes
Prepare your kale by destemming and chopping into 1 inch strips or bite size pieces. Melt the butter in a large saucepan adding the garlic. Sauté briefly til fragrant. Add the kale to soften about 2 min. Then add your Zoodles. Stir for about 3 minutes, combining the Zoodles and kale.
Add your Parmesan cheese mix. Add diced tomatoes for additional yum! Smile as your gut sings!
