KISS Kale Salad

The farmers are growing some of the most delightful fruits and vegetables this time of year. The stone fruit are abundant as well as the dark leafy greens which compelled me to put together a simple kale salad. Not everyone loves kale but I must say more and more people are now that its health benefits are in the limelight.
1 bunch kale – I use the one that looks the darkest and crunchiest
1 nectarine (sliced skin on)
1 white peach (sliced skin on)
1 apricot (sliced skin on)
1 T hemp seed
1T pumpkin seed
1 T sunflower seed
1 T goji berry
½ c grape tomatoes sliced in half
1 lemon
2 T olive oil
2 T balsamic vinegar
1 tsp honey or muun chi Fermented Roots
Tear the kale into bite size pieces. Cut the lemon in half and save one half for the dressing. Squeeze one half of lemon juice onto torn kale. Massage into juice into the kale pieces. Let while making the dressing and slicing the stone fruit.
Dressing
Mix the olive oil, balsamic vinegar and lemon juice, and honey or roots.
Arrange the fruit onto the kale, sprinkle the seeds and dressing.
Toss gently. Some people like to add feta cheese.
This salad travels well as the kale does not get soggy. I love stone fruit with arugula as well. Feel free to substitute arugula for kale. Enjoy!
