Father’s Day Tofu Scramble

Happy Father’s Day to all those amazing dads! There is very little I enjoy more than making food for friends and family.  I have a friend who loves scrambles.  This is made with tons of veggies, tofu and quinoa. It’s not your typical scramble – it may be more like a stir fry. You may choose to eat it any time of day, with family, friends or by yourself watching the sunrise or set.  Any which way, there will be a smile on your face and hum in your gut.


Marinate while chopping the veggies:

16 oz pkg of frozen diced tofu ( defrost, drain the liquid and marinate it while chopping the veggies)

3/4 c muun chi fermented beet BBQ sauce

1 c cooked quinoa

 

Dice into bite size pieces:


1 green pepper

1 yellow pepper

1 orange pepper

1 red onion

½ bunch of broccoli with stalk

1 c grape tomato

 

Sauté the onions in 2 T muun chi fermented roots until fragrant.  Add the diced veggies and toss until tender. Throw in the marinated tofu with sauce and quinoa - combine and crumble to your desire. Garnish with chopped parsley or cilantro. Share with your favorite father figure and say thank you for all the gifts of love while nurturing your guts!
