Eggless Veggie Omelette


We continue to offer you savory ways to start your day. This is a simple omelette/crepe packed with protein and fiber. You may even decide to keep this batter in your fridge so you can make a fresh one everyday. It’s so easy when you meal prep and have all the ingredients cut up in advance!


Ingredients (1 serving):


  • ½ cup cooked red or yellow lentils (soft, almost mushy)

  • 1 T muun chi CoCoFir

  • 1 T ground flaxseed helps bind and excellent source of fiber

  • 2–3 T water or veggie broth to create a pourable batter

  • 1 T muun chi Fermented Roots

  • ½ cup your favorite chopped veggies - spinach, onion, mushrooms, zucchini, peppers)

  • Chopped cilantro

  • Optional: chopped nuts


Instructions:


  1. In a blender, combine lentils, flaxseed, water, and fermented roots until smooth and pourable.

  2. Heat a skillet over medium heat - with avocado oil or use a nontoxic ceramic crepe pan and no oil.

  3. Sauté veggies with a little fermented roots, set aside.

  4. Pour the batter into the pan, spread evenly.

  5. Once edges set (2–3 min), add chopped veggies on one half.

  6. Fold over gently and cook another 2–3 minutes until firm. Flip if you want both sides to be golden.

  7. Serve warm with a spoonful of muun chi CoCoFir

    or muun chi Fermented Roots


    This omelette recipe is so easy to add variety and fun. You may choose to put hemp seeds or chia seeds in the batter one day. You may choose to add avocado chunks or kale or cooked sweet potato or broccoli on another day.

    Shoot for diversity and your gut will be so happy !!
