Black Bean Lentil Burger

Updated: Feb 5

It’s nice to have a burger on hand. I make these and then store them in the freezer in case I need a quick meal. They are packed with fiber and protein and are so good for your gut. Eat them like you would any burger, with or without a bun.

1/2 c cooked lentils

1 c cooked black beans

1/2 c chopped walnuts

1/2 c diced onion

1/4 c chopped red pepper

1/3 c ground muun chi crackers or UPnola

1 T muun chi fermented roots

1 tsp paprika

1/2 tsp cumin

1 T coconut aminos

2 T flaxmeal plus 1/3 c water

1 T tomato paste

Mix your flaxmeal with water and let sit while you prepare the other ingredients. Mix all the ingredients in a bowl til well combined. If you do not have the muun chi crackers or UPnola, you may use regular crumbs but you may need to add more flax if you want the patty to stay together. muun chi crackers and UPnola both have flax in them and this helps keep the patty firm

Form into patties or meatballs. Place in the fridge for 20 to 30 minutes to firm up and make it easier to cook. You may grill, or pan fry or bake in the oven at 375 degrees for 30 minutes.

i like to serve these burgers wrapped in lettuce with avocado and tomato slices. I like to mix muun chi Cocofir with the fermented roots and make a tasty dressing. I love to make mini ones for the grandchildren. They make a great finger food.
