The Wedding of Kale and White Beans

I just love making soups. I think of my dad as I make it, and I can hear him smile when I finish. Yes, he had a smile that you could hear when it came to soup. This is a fun, easy recipe that is sooo good for the heart as we celebrate Heart Health month.


1 T avocado oil

1 c. chopped yellow onion

1 c sliced celery

1 diced garlic cloves

1 T chopped fresh rosemary

1/2 tsp thyme


Sauté the above ingredients for about 5 minutes. Season with a little salt and pepper.

Add


4 c. Veggie broth

4 c cooked white beans

6 c. Kale or your favorite dark green leave

1 T lemon or muun chi Golden Turmeric Kvass


Serve with fresh chopped parsley and be ready to smile as you feel the marriage of the white beans and kale come together. This soup is packed with great fiber that will feed your microorganisms and strengthen the many strains in your happy gut.
