Green Curry

I’m learning so much about spices. They are so good for the gut! This week I’m exploring the Thai curry and will be using an eggplant. As we diversify the gut, trying as many different veggies and spices will only improve your gut.


Sauté the following over medium high heat til fragrant


2 onions chopped

2 c chopped celery

2 c sliced carrots

1/4 c Sweet Immunity

1 Thai chili chopped fine

1 tsp garam masala

1 tsp cinnamon

1 tsp cloves


Take 1 cup of this sautéd veggie mix and add 1 c cooled navy beans. Blend the beans with the 1 cup of veggies to make a thick slurry.


Return the blend and mix with the rest of the veggies. Add:


1 c CoCoFir

½ teaspoon Cumin Seed

1 c chopped red pepper

1 Large Eggplant - sliced into ½ inch cubes

2 cups Spinach - chopped

½ cup Basil - fresh leaves

touch of Soy Sauce or Sea Salt

Add some cooked sweet cubed potato if desired


Serve this with a resistant starch rice warmed up with some muun chi Lemon Turmeric chia pudding. vlose your eyes and imagine you’re in Thailand. I can feel the gratitude already.
