Spring Sandwich Salad Spread

Try saying that five times really fast...I love picnics in the spring. This is a spread that pairs well with our muun chi Flatbread. I love spreading on our savory Garlic Beet or our Banana Apple. It is packed with probiotics and prebiotics.


1 med ripe avocado

1 garlic clove, minced

1 c chickpeas (I trust the Eden brand if buying can or the heirloom ones from Rancho Gordo. They are finding glyphosate on this popular bean so be picky)

1/4 c muun chi CoCoFir

1 T apple cider vinegar or muun chi Golden Turmeric Kvass

1/4 c each chopped dill and parsley

2 sprigs scallion chopped (2 T red onion is also a great substitute)

1/2 chopped apple or celery

juice of half a lemon

Salt and pepper to taste


Rinse and drain the beans and smash them with a fork. Add the avocado meat and continue to smash them together. Add the CoCoFir, Kvass, dill, parsley, scallion, lemon, apple and salt and pepper to taste.


Serve on slices of tomato, favorite greens and flatbread. Close your eyes and imagine sitting on a beach watching the dolphins. Or even better, take a walk with your favorite friend and sit under a tree and enjoy!
