Sonny’s Nondairy Cheese sauce

I've been spending lots of time with my grandson Sonny as my daughter and son-in-law care for their twins. It's been such a blast! Here's a sauce that is the healthier version of that artificially flavored and colored cheese sauce that Kraft created decades ago.


1/2 a butternut squash

1/2 c muun chi Pumpkin chia pudding

1/2 c CoCoFir

1 inch turmeric root

2 T nutritional yeast


Slice the squash into 1 inch discs, lightly rubbed with avocado oil and bake at 425 degrees for 30 min or until tender. I leave the skin on and put in the pulp and seeds as well for additional nutrition and less waste.


Put all the ingredients into a vitamin and blend until smooth. Season with salt and pepper or keep it simple.


Sonny loves this sauce. It reminds him of the cheesy stuff and it's actually good for him! Serve over pasta, zoodles or quinoa. Yummmm... happy fall!
