Lemon Dressing

Happy Happy Father's Day! I'm not making a soup today, but I am thinking of my father!!! And am in deep gratitude for all the lessons and love he gave me in life. He did love lemons mostly because we could find them pretty much anywhere we walked around his neighborhood. Any lemons on the ground that he found were free for the taking. He loved gathering them and then heading home to make a tall pitcher of fresh lemonade.


This is a dressing that people have been asking me to share. It's such a simple recipe, and yet makes such a difference on a salad, especially if it's a salad that has hints of fruit. There's never a need to buy a dressing from the big box store where they add emulsifiers, refined sugars and preservatives to make them last on a shelf.


1/4 c olive oil

2 T muun chi Lemon Turmeric Chia Pudding

2 T white balsamic vinegar

(Optional 2 cloves of chopped garlic and your favorite herbs)

Salt and pepper to taste


I throw everything in a jar, and shake. One of my favorite salads to toss it with has a mix of red leaf lettuce, baby spinach and arugula. I slice up strawberries, radishes and fennel, then sprinkle the salad with some of muun chi cottage cheese. I'll share the recipe next week.
