Celeriac and Sweet Potato Soup

I love root veggies. This soup is in celebration of fall. As the weather cools, and the skies cloud over, I love cuddling up with a nice mug of warm soup. This one is filled with essential ingredients that boost your circulatory system and aid digestion, resulting in increased energy. You’ll also find that the turmeric root will benefit your joints and muscles by alleviating any inflammation.

1 T coconut oil

1 chopped onion, yellow is delicious in this recipe

1 garlic clove minced

Cook the above gently til fragrant, then add

1/2 tsp chili flakes

1 tsp coriander seeds, finely crushed

1 tsp turmeric root, minced

2 sweet potatoes diced

1 celeriac diced

cook about 5 minutes on low.

Add 4 cups of veggie stock with some black pepper and Himalayan pink salt. Bring to a boil and then simmer for about 30 minutes.

Using your hand blender, emulsify til smooth, or you may find it easier to use your blender.

Serve with muun ch CoCoFir, pumpkin seeds and chopped cilantro.

Super filling and perfect for a cool autumn evening. I love thinking about the how my kidneys and vascular system will benefit from this soup. And my gut will be satiated!
