Vinaigrette with Kvass, CoCoFir, and jalapeño

Updated: Mar 29, 2021

Spicy is not for everyone, but I sure do love it. There are some great health benefits that come from eating spicy food too. Studies have shown that spicy foods help keep diseases away, have anti-cancer properties and help burn calories, just to name a few. Jalapeno, in particular, has been shown to help reduce bad cholesterol, helping to keep the heart healthy. The capsaicin of spicy food fights the inflammation inside the body associated with heart attack.

This week's recipe is a yummy vinaigrette that uses muun chi Kvass, muun chi CoCoFir and jalapeno. Have a probiotic on you salad, add some spice, and you've got yourself some awesome happiness for your gut! You can also make this without the jalapeno, if you prefer to live on the mild side...hehe.

I like to put it in my ninja and give it a nice whirl. It makes a yummy marinade too on fresh sliced zucchini (sliced lengthwise...my favorite) or any veggies. Skewer up some mushrooms, zucchini chunks, parboiled potatoes, cherry tomatoes, marinade for a few hours and grill. Fresh, clean and oh so good for the gut!

3/4 c of muun chi CoCoFir

2 T. muun chi kvass

1 jalapeno, chopped (remove the seeds if you don't like spice)

1 T chopped fresh ginger or about 1/2 inch

1 tsp dijon mustard

salt

pepper

1/4 tsp cumin

chopped parsley

if you want a little sweet, add a 1/2 a plum, peach, strawberry or a date

Makes about a cup and it will last for a week in the fridge. yummmmmm
