Refreshing Summer Salad

With summer in full swing, I find the watermelon to be particularly sweet. Combine the watermelon with another fruit that is at its peak, the green kiwi. Add a crunchy prebiotic - the jicama root - and a delicious summer salad is born. Mint and basil and muun chi Golden Kvass, make this refreshing salad particularly healing and beautiful.


1 mini watermelon - cut into 1 inch cubes

4 green kiwi - peeled and quartered

1 large jicama - peeled and chopped into bite size pieces

1/4 c chopped mint

1/4 c chopped basil

1/2 c muun chi Golden Turmeric Kvass

Salt and pepper to taste


Toss all ingredients gently in a bowl. Serve garnished with mint. Enjoy as you bask in the sun. It has a nice sweet and salty profile. You will be helping fight cancer, and cholesterol, while providing fiber and all nutrients good for the heart and circulation.
