Pumpkin Cinnamon Chia Pudding

In celebration of our new season, we are introducing a pudding that is made from puréed pumpkin and cinnamon mixed with chia and our favorite CoCoFir. I love that its so yummy and so good for you. It's packed with antioxidants, Vitamin C and omega 3's. Good for your heart and cholesterol levels.


You may choose to roast your pumpkin, or keep it simple and use an organic pumpkin puree. To keep things easier, this recipe calls for the pureed pumpkin and lots of good spices.


1 16 oz. can pureed pumpkin ( try and use one that is one ingredient - organic pumpkin. Many will use other squashes and additives. I used the Farmers' Market brand)

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

1/2 c ground dates

1/2 c chia seeds

4 c CoCoFir

Optional chopped pecans


Blend the pumpkin with the dates. When fully combined add the spices. In a bowl mix the CoCoFir with the pumpkin mixture. Stir until a fully incorporated. Add the chia seeds and let sit for 15 minutes.

Chill for at least two hours. Serve chilled like a pumpkin pie in a jar without any cream or refined sugar. Sprinkle with chopped pecans. Close your eyes and smell the autumn bliss and imagine sitting in a pumpkin patch surrounded by giant pumpkins. Better yet, grab a friend and find a local pumpkin patch, support a local farmer and make it real.
