Lemony Zucchini Wedges

Happy Happy Mother's Day to all!!!! Today my son is in charge of making our Mother's Day Brunch as my daughter who lives in town is also a mom. The men in our lives blessed us with the day off. I was trying to think of a recipe my youngest son would enjoy making, and could master the first time, since he doesn't spend a lot of time in the kitchen. This dish is super easy and so delicious.


4 large zucchini - quartered and cut into wedges, then halved so they are like 4 inch wedges

1 med onion - roughly chopped

1 minced garlic clove

1 T avocado oil

Your favorite herb

3 T muun chi Lemon Turmeric Chia Pudding


Warm the avocado oil, then add the garlic and onion and sauté til fragrant. Add the zucchini wedges and toss until brown edges appear. This will probably take 3 minutes. Turn the flame off, add the Lemon Chia Pudding and your herbs. I used savory herb from my garden, but feel free to use thyme, marjoram, sage. These will all be delicious finishes. I am so grateful to all the wonderful moms in the world!! I am in AWE of all you do for others!! Enjoy!
