Watermelon Carrot Salad and Fragrant Dressing with CoCoFir and Kvass

I met a new friend at the market yesterday. She shared a delightful recipe with me. I adore recipes that allow me to actually taste the ingredients that are in it – in many cases it’s ‘the simpler the better’! Kat is new to the Los Angeles area, and I had so much fun hearing about her adventures with food. We got on the topic of the beautiful beet. The beet has been getting a lot of press recently because one of its benefits is improved blood flow to all our organs, including our sex organs.


This is my twist on it, using our beloved muun chi Kvass and CoCoFir to make the dish filled with probiotic benefits. Thank you Kat! and welcome to Los Angeles!


Salad:

2 cups of matchstick carrots

1 cup of matchstick fresh beets


Dressing:

1 T muun chi classical Kvass

1 T fresh squeezed lemon juice

2 T muun chi CoCoFir

1/2 teaspoon sweet paprika

1/4 teaspoon ground cumin

1/4 teaspoon cinnamon

Small pinch of salt

Small pinch of cayenne


Topper:

2 T toasted pumpkin seeds


To make the dressing, just stir ingredients together and dollop on top of the salad.
