Crunch and Cream Cucumber Salad

We’re in the middle of summer, just finished enjoying the full moon of July. Cucumbers, avocados and mint are in abundance at the Farmers markets. For this salad, I used the little Persian cucumbers, but any are fine - the crunchy ones taste best in this salad.


I love leaving the skin on my cucumbers, especially these little guys. I simply cut them into small rounds about 1/4 inch thick and mix them with creamy avocado, mint and scallions.


6 small Persian cucumbers

2-4 scallions

a handful of fresh mint

2 ripe avocados

1 T muun chi CoCoFir

1 T lemon

salt and pepper to taste, red pepper flakes optional


Cut up your scallions and mint and set aside.

Peel and dice your avocados. To your rounds of cucumbers add the scallions and mint. Let your lemon mingle with the fresh flavors of the cucumber, scallions and mint. When ready to serve, add your ripe avocados. You want to mix the ingredients to the point of the avocados creating their own creaminess while at the same time maintaining some cubes.


You may eat this salad as is, or you may put it on top of your favorite greens. I love the way it reminds me of summer. A few grape tomatoes cut into it also gives it color and some added flavor if you like.


Cucumbers are a wonderful addition to help your body detox by adding fiber and water to your system and assisting the liver to protect your body from toxins. Avocados are great for keeping your metabolism working optimally and helping to keep your eyes healthy as well. By adding CoCoFir, you now have a yummy probiotic salad packed with fiber and all kinds of goodness!
